Tacobill Russell St Pty Ltd is looking to recruit a qualified and experienced Chef.

About the full time, ongoing role

Offering modern Mexican cuisine, our long established and successful full-service restaurant is seeking a skilled and qualified full-time Chef to lead the kitchen team.

Melbourne CBD Vic

Duties and responsibilities

·      Oversee and participate in the preparation, cooking and presentation of meals

·      Supervise the preparation of meals by kitchen staff and ensure quality and consistency of dishes

·      Create, plan and update menus based on seasonality, customer preferences and culinary trends including develop, test and introduce new dishes to rotating special menu

·      Manage kitchen consumables, stock takes, ordering food supplies, budgeting and cost control including estimating food and labour costs

·      Develop and maintain relationship with suppliers to ensure the quality and timely delivery of ingredients, negotiate pricing, and source seasonable and speciality items

·      Manage and coordinate kitchen staff including scheduling, training and supervision of cooks and prep cooks, advising kitchen staff on cooking procedures and techniques

·      Address customer feedback and inquiries promptly to ensure a positive dining experience

·      Work alongside the management, kitchen and service teams to discuss food preparation issues

·      Ensure compliance with and supervision of OH&S and Food Safety standards

Qualifications, experiences and skills

●     Possess relevant post-secondary hospitality (cooking) qualifications at the Australian equivalent level of Certificate IV in Commercial Cookery or higher

●     3 years professional experience

●     Proficiency in Mexican cuisine, menu development and relevant culinary skills (knife skills, grilling, roasting, sauce developing and making)

●     Experience supervising and training cooks

●     Excellent presentation and time management skills and keen attention to detail

●     Are available across the working week including weekends, nights and public holidays

The successful applicant will be employed on a full-time basis and will be paid an annual salary in the range of $70,000.00 to $75,000 plus Employer Superannuation Guarantee and is entitled to receive leave in accordance with the relevant Fair Work instrument.
