Head Sommelier

LOCATION: 2KW Bar and Restaurant

HOURS: Full Time

PRIMARY OBJECTIVES OF THE ROLE

Lead the wine program, curating a winelist that reflects the venue's identity and elevates the guest experience. This role needs to combine exceptional wine knowledge with strong leadership, proven operational excellence, and a passion for service. You manage the wine team, oversee purchasing and inventory, develop training programs, and work closely with other food and beverage managers to deliver a well-rounded offering

KEY RESPONSIBILITIES

Wine Program & Cellar Management

  • Curate, maintain, and evolve a wine list that reflects the venue's style
  • Manage wine procurement, supplier relationships, and stock control, ensuring a balanced and profitable list.
  • Conduct regular stocktakes and maintain accurate records.
  • Maintain and update the wine list in line with venue standards.
  • Ensure accurate pricing, wording, and design.

Service & Guest experience

  • Deliver high standards of wine service, whilst guiding guests with passion and approachability
  • Act as a key presence on the floor, enhancing the dining experience through wine and beverage engagement whilst supporting the rest of the team
  • Support the restaurant manager in daily service operations.
  • Maintain wine service tools (Coravins, glassware) and FOH standards.

Stock & Systems

  • Support the Stock Manager with stock control, ordering, and wine stocktakes.
  • Streamline cellar and stock systems for efficiency.
  • Ensure stock levels are maintained and discrepancies reported.

Training & Development

  • Develop and deliver staff wine training programs covering varietals, service, upselling, and food pairing.
  • Mentor staff to build confidence and product knowledge.
  • Identify and recommend reading materials and educational tastings for staff.
  • Assist in developing strategies to achieve budgeted GP targets.
  • Lead, mentor, and train the service staff, building knowledge and confidence in wine service.
  • Organise regular tastings, workshops, and supplier-led sessions for staff development
  • Foster a culture of hospitality, professionalism, and continuous learning.

Financial & Strategic Responsibilities

  • Monitor wine program performance and drive sales through strategic list design and promotions.
  • Identify trends and opportunities to enhance profitability while maintaining quality and integrity.
  • Collaborate with marketing to support wine-related events, promotions, and storytelling.
