The Venue

Loulou Bistro is a brand new vibrant French dining destination in Sydney's CBD, offering a warm and lively atmosphere inspired by the great bistros of Paris. Known for its refined yet approachable menu, freshly baked breads, and house-made charcuterie, Loulou celebrates classic French cuisine with a modern sensibility.

Our bistro is complemented by our boulangerie and traiteur, making Loulou a true all-day French experience for our guests — from morning coffee and pastries to elegant evening dining.

The Opportunity

We are on the lookout for an Assistant Head Sommelier to support and evolve our beverage program at Loulou CBD. This role is key to ensuring a world-class guest experience and leading the team with a focus on wine excellence, product knowledge, and a commercial mindset. The role will collaborate closely with our Group Beverage Manager to ensure Loulou maintains its position as a premier French bistro destination in the city.

The Role

  • Deliver an exceptional wine and beverage experience aligned with the Loulou brand.
  • Lead service teams in providing polished, knowledgeable and warm hospitality.
  • Assist in the curation and evolution of the wine list, championing French wines alongside international highlights.
  • Monitor and manage wine stock, costs and supplier relationships.
  • Build meaningful relationships with guests and help cultivate a strong base of regular clientele.
  • Support a culture of learning, refinement and service excellence across the floor team.
  • Remain across global and local wine trends and share knowledge with the team to continually enhance guest experience.

What We're Looking For

  • 2–3 years experience in a sommelier or wine-focused role within premium venues.
  • WSET, CMS or equivalent certification preferred.
  • Deep understanding of French wine regions and varietals.
  • Strong leadership, communication and service skills.
  • Commercial acumen and understanding of cost control.
  • Must have full working rights in Australia.
