Falcone Hospitality Group is seeking a driven, hands-on Licensee to take charge of The Haymarket Hotel — a high-profile CBD pub renowned for its strong gaming trade and vibrant bar and bistro offering.

About the Role

As Licensee, you'll oversee all facets of venue operations with a focus on compliance, team leadership and delivering exceptional customer experiences. You'll work closely with senior management to maximise the venue's performance across gaming, food, beverage and events while maintaining The Haymarket Hotel's reputation.

What You'll Be Doing

• Leading and mentoring a high-performing management and service team
• Overseeing the hotel's gaming operations, ensuring excellence in compliance and customer care
• Managing daily operations across bar, food, functions and floor
• Ensuring all RSA/RCG and licensing obligations are met
• Driving revenue through gaming, events and promotional initiatives
• Managing budgets, labour costs and stock control
• Maintaining the highest standards of service, presentation and safety

What We're Looking For

• Proven experience as a Licensee or Venue Manager in a high-volume gaming venue
• Current RSA, RCG and NSW Liquor Licence
• Strong leadership, communication and business management skills
• Deep understanding of gaming compliance and best practice
• A passion for hospitality, people and creating standout experiences
