Papa Rolly's is seeking an experienced Head Chef to lead our kitchen operations within a modern, well-run and fair restaurant group. This is a rare opportunity to take ownership of a high-performing kitchen, guide a talented team, and contribute to an evolving, quality-driven menu.

• Menu leadership: Design seasonal menus, develop new dishes and recipes, and guarantee consistent quality, flavour and presentation.
• Kitchen operations: Oversee daily service, manage workflow and pass, assign sections, and ensure timely execution during peak periods.
• People management: Recruit, train, roster and mentor kitchen staff; foster a calm, supportive and accountable team culture.
• Inventory & procurement: Control stock levels, place orders, manage supplier relationships, minimise waste and maintain targeted food costs.
• Standards & compliance: Uphold stringent food safety, health and hygiene standards; ensure equipment care, maintenance and compliance.
• Financial stewardship: Manage kitchen budgets, track costs and margins, and contribute to overall venue profitability.

• Proven experience in a Head Chef (or strong Senior Sous stepping up) role.
• Full Australian working rights and currently based in Australia.
• Calm, professional leadership style with excellent communication skills.
• Strong organisational skills and meticulous attention to detail.
• Team-focused with a genuine commitment to service and guest experience.
• Italian cuisine experience is highly regarded, but not essential.
