As Sous Chef, you'll work closely with the Head Chef to lead day-to-day operations of the Beach Club kitchen. You will guide the team through à la carte service, develop menus using fresh local produce, ensure kitchen compliance, and deliver exceptional guest experiences in a refined yet relaxed dining environment.
Where you'll make an impact- Lead the kitchen team to deliver high-quality, innovative contemporary Australian dishes
- Oversee creation and execution of à la carte and seasonal tasting menus
- Maintain consistency, quality, and presentation of every dish
- Manage inventory, ordering, and kitchen operations
- Collaborate on special menus and seasonal offerings
- Work closely with the Head Chef and Sommelier to pair dishes with a premium wine list
- Uphold food safety, hygiene, and kitchen compliance protocols
- Support the training and development of junior chefs
- Maintain a productive, positive kitchen culture built on collaboration and excellence
You are a confident and creative culinary leader with a strong background in premium restaurant service. You have a passion for Australian cuisine, an eye for detail, and a calm, motivating approach that brings out the best in your team.
To be successful, you will need:- Certificate III in Commercial Cookery or equivalent (Essential)
- Current Food Safety Supervisor Certificate (Essential)
- Minimum 5 years' experience in a Sous Chef role or similar senior kitchen position
- Proven ability to lead, manage, and inspire a high-performing kitchen brigade
- Strong organisational skills, food costing, and inventory control experience
- Experience in designing and executing seasonal menus and specials
- Proficiency in Microsoft Word, Excel, or equivalent
- A positive attitude, flexible approach, and a commitment to delivering luxury-level guest experiences
