Assistant Restaurant Manager – 1 Hotel & Homes Melbourne

As Assistant Restaurant Manager, you'll play a key role in bringing our philosophy to life, leading an engaged team, creating memorable dining experiences, and driving excellence across our food and beverage operations.

Reporting to the Restaurant Manager and Director of Food & Beverage, you'll oversee the day-to-day restaurant operations, ensuring seamless service, exceptional guest experiences, and a motivated, high-performing team. This is a hands-on leadership role where you'll lead by example, support your team during busy service periods, and step up confidently in the Restaurant Manager's absence.

What you'll be doing:

  • Lead and support the team to deliver outstanding guest experiences.
  • Oversee daily restaurant operations and financial performance.
  • Assist with recruitment, onboarding, training, and team development.
  • Monitor budgets, food and labour costs, and key business metrics.
  • Maintain strong communication across departments and uphold 1 Hotels brand standards.
  • Foster a positive workplace culture that values wellbeing, balance, and growth.

What we're looking for:

  • Minimum 2 years' experience in a management role within a luxury hotel or high-end restaurant.
  • Proven leadership skills with a hands-on, people-first approach.
  • Strong financial and operational knowledge (P&L, budgets, cost control).
  • Excellent communication and time management skills.
  • A genuine passion for hospitality, sustainability, and creating memorable guest experiences.
  • Flexibility to work across a rotating 7-day roster.
