Commercial Hotel Hamilton is seeking an experienced culinary professional to join our team and help us continue our tradition of great food, warm hospitality, and memorable dining experiences.

Located in the heart of Hamilton, the Commercial Hotel is a long-standing venue known for its welcoming atmosphere, excellent service, and quality pub-style dining. We cater to both locals and visitors, offering everything from classic pub favourites to modern dishes with a creative twist.

Whether it's a busy dinner service, a function, or a casual meal, our kitchen team plays a vital role in maintaining our reputation for consistency, flavour, and value.

Key Responsibilities

  • Prepare and cook a wide range of dishes to menu and presentation standards
  • Ensure consistency in taste, presentation, and portioning across all services
  • Work collaboratively with the kitchen team to deliver smooth service during peak times
  • Uphold strict food safety, hygiene, and cleanliness standards at all times
  • Assist with stock management, ordering, and inventory control
  • Contribute to menu planning and the development of specials
  • Train, mentor, and support junior staff and apprentices
  • Ensure compliance with workplace health and safety regulations

Qualifications & Experience

  • Minimum qualification: Certificate IV in Commercial Cookery
  • Diploma in Hospitality/Management (desirable)
  • Minimum 2- 3 years' experience in a commercial kitchen (experience in pub, bistro, or function dining highly regarded)
  • Strong knowledge of food safety regulations and handling procedures
  • Ability to perform under pressure and manage multiple tasks effectively
  • Excellent teamwork and communication skills
  • Reliable, punctual, and committed to excellence
  • Flexibility to work evenings, weekends, and public holidays as required
