Industry Beans is an award-winning specialty coffee roaster, café and restaurant operator and retail brand with seven premium venues and growing across Melbourne, Sydney and Brisbane.

Industry Beans Newstead is a 100 seat café, restaurant and coffee roastery housed within an architecturally designed warehouse conversion. With a focus on fresh, seasonal produce and innovative cooking techniques, the menu at Newstead strikes a beautiful balance between café staples, signature dishes and high-quality share plates. Working from a spacious, state-of-the-art kitchen, our team of Chefs work together to produce exceptional food 7 days a week.

The Role

We're looking for an experienced and passionate Head Chef to take ownership of the kitchen and all BOH operations. The Head Chef is key to establishing and delivering a high standard and consistent quality of all menu items and kitchen operations.

Reporting to the Food and Beverage Director, the right person will have proven experience in a fast-paced kitchen and experience leading a kitchen team. A commitment to high standards of kitchen preparation, plating, cleanliness, consistency and food safety standards is crucial to this role.

Tasks and responsibilities:

  • Developing and leading a strong kitchen team to consistently deliver high-quality food
  • Leading the team to execute a modern and innovative lunch and dinner menu including, functions and catering menus
  • Manage all BOH cost including cost of goods, wastage and wage targets
  • Rostering, shift management and time sheet approvals
  • Stock management including ordering, rotation and wastage control
  • Identifying industry trends and delivering seasonal menu updates and refinements

You'll be perfect for this role if you have:

  • Minimum Cert III Commercial Cookery
  • A minimum 3 years in a similar role
  • A sound understanding of all kitchen operations
  • A constructive, positive approach to team management and development
  • A passion for innovative cooking technique with a modern approach to kitchen and food management
  • Creativity in menu development
  • Advanced administration, business and operational understanding
