Amora Brisbane is a fully refurbished 296-room, 5-star hotel located in the heart of the CBD. Our dining venues include dapl Restaurant, Two Donkeys Café, Lobby Bar, and In-Room Dining – all delivering high-quality, modern Australian cuisine with warm, engaging service.

About the Role

We are seeking a passionate and reliable Casual Commis Chef to join our kitchen team. This is a hands-on role supporting daily breakfast, lunch and dinner across dapl Restaurant, Two Donkeys Café, and In-Room Dining.

While a strong focus will be on breakfast preparation and service, this role also offers flexibility to work across other service periods and in banqueting based on business needs.

Typical morning shifts start from 5:00–5:30 AM, but additional shifts may include daytime or evening hours depending on operational requirements.

What We're Looking For

  • Trade-qualified in Commercial Cookery
  • Previous experience in hotel or restaurant kitchens, ideally in a 4- or 5-star environment
  • Strong skills in both buffet and à la carte preparation
  • A great communicator who works well under pressure
  • A team player with a positive attitude and strong work ethic
  • Flexibility to work a rotating roster, including weekends and public holidays
