Position Title: Apprentice Chef
Reports To: Head Chef / Sous Chef
Location: All affiliated kitchen locations - Bulli Beach Cafe / Thirroul Beach Pavilion / North Beach Pavilion
Employment Type: Full-Time Apprenticeship

Position Summary:

The Apprentice Chef is an entry-level position designed to support individuals undertaking formal training in commercial cookery. Working under the supervision of senior kitchen staff, the Apprentice Chef is responsible for assisting in the preparation, cooking, and presentation of food while learning and applying best practices in kitchen operations, food safety, and hygiene. This hands-on role provides the foundational skills and experience needed to progress toward becoming a qualified chef.

Key Responsibilities:

1. Food Preparation & Cooking

  • Assist with basic food preparation, including chopping, peeling, measuring, and mixing ingredients.
  • Learn and assist with cooking techniques under the guidance of qualified chefs.
  • Support the preparation of menu items according to recipes and presentation standards.
  • Ensure portion control and consistency across all dishes.

2. Kitchen Operations

  • Maintain cleanliness and organisation in all kitchen areas.
  • Follow food safety and hygiene regulations, including proper storage, handling, and cleaning procedures.
  • Participate in cleaning and sanitising kitchen equipment, utensils, and work areas.
  • Follow kitchen opening and closing procedures as directed.
  • Following WHS policies and procedures and attending shift in uniform

3. Learning & Development

  • Attend training sessions and complete all assigned coursework and assessments as part of the apprenticeship program.
  • Observe and learn from senior chefs in all areas of the kitchen.
  • Seek feedback and demonstrate a commitment to skill development and continuous improvement.
  • Stay informed about food trends, seasonal produce, and kitchen techniques.
  • Participate in the Certificate III in Commercial Cookery program, delivered in-house via Quality Hospitality, our dedicated training provider.

4. Teamwork & Communication

  • Work collaboratively with the kitchen team to ensure smooth service delivery.
  • Communicate clearly and respectfully with colleagues and supervisors.
  • Assist with receiving and storing deliveries under supervision.
  • Uphold a positive and respectful attitude in a fast-paced environment.

Qualifications & Experience:

  • Enrolled or willing to enrol in a Certificate III in Commercial Cookery (or equivalent)
  • Training is delivered in-house via Quality Hospitality, our approved training partner
  • No prior experience necessary, but any experience in a kitchen or hospitality environment is advantageous
  • Must be eligible to work in Australia and undertake an apprenticeship

Working Conditions:

  • Must be available to work a flexible schedule, including evenings, weekends, and public holidays
  • Physical demands include standing for extended periods and lifting kitchen equipment or stock – Minimum ability to lift a crate of milk
  • Fast-paced kitchen environment requiring attention to detail and efficiency
