Located on the beautiful coastline of Mackay, Ocean International is a boutique hotel offering refined service and exceptional hospitality. Featuring two distinct food and beverage outlets — a modern fine dining restaurant and a casual, relaxed poolside venue — we deliver memorable experiences from morning coffee to evening cocktails.

We are seeking an experienced and motivated Restaurant Manager to oversee the operations of both venues, including breakfast, lunch, dinner, and bar service.

The Role

This is a hands-on leadership position responsible for ensuring smooth daily operations, exceptional guest service, and consistent quality across both outlets. You'll work closely with the Executive Chef and Operations Manager to uphold standards, manage staff performance, and contribute to the continued growth and reputation of Ocean International.

Key Responsibilities

  • Oversee day-to-day operations of both the fine dining restaurant and casual poolside venue.
  • Lead, train, and mentor front-of-house and bar staff to maintain service excellence.
  • Manage service for breakfast, lunch, dinner, and bar operations.
  • Ensure a high level of guest engagement and personalised service.
  • Oversee rosters, stock control, ordering, and supplier relationships.
  • Collaborate with the kitchen team on menu development, specials, and promotional activities.
  • Support private functions, weddings, and corporate events as required.
  • Monitor budgets, labour costs, and sales performance to achieve targets.
  • Ensure compliance with RSA, health, hygiene, and workplace safety standards.

About You

  • Previous experience as a Restaurant or Food & Beverage Manager in a hotel or multi-outlet venue.
  • Strong leadership and team management skills.
  • In-depth knowledge of both fine dining and casual service styles.
  • Excellent organisational and communication skills.
  • A passion for food, wine, and creating memorable guest experiences.
  • Current QLD RSA certification (essential).
  • Flexibility to work a roster, including weekends, mornings, and evenings.
