At Mures Tasmania, seafood is our passion — delivered fresh from hook to plate. As a vertically integrated company, we pride ourselves on excellence at every stage, from our own fishing vessels through to our restaurants and retail.

We are looking for a professional and experienced Manager to lead our Fishmongers department at Mures Lower Deck.

Our Fishmongers showcases the best of Tasmania's local catch alongside premium Australian seafood sourced from responsible and sustainable fisheries and aquaculture producers. We supply both direct-to-customer retail sales and the freshest produce to our onsite dining venues.

About the Role

As Fishmongers Manager, you will:

  • Lead, motivate, and develop the Fishmongers team, ensuring exceptional service and product knowledge.
  • Oversee daily operations including stock rotation, ordering, pricing, and display presentation.
  • Maintain compliance with all food safety, WHS, and company standards.
  • Manage rostering and labour costs to budget.
  • Resolve customer enquiries and complaints with professionalism and a "can do" attitude.
  • Drive training, development, and succession planning for the team.
  • Collaborate with our fishing, restaurant, and culinary teams to showcase our seafood across the business.

What We're Looking For

The successful candidate will be:

  • Professional, approachable, and customer-focused.
  • Experienced with seafood, with strong local fish knowledge, filleting, and portioning skills.
  • A confident leader with excellent communication and organisational skills.
  • Able to balance hands-on operational work with team development and business oversight.
  • A flexible problem solver with a "can do" approach.
  • Skilled in managing budgets, COGs, rostering, and staff performance.

Hours & Expectations

Mures operates 7 days a week, with the Fishmongers open from 8am – 7pm (open shifts from 6am). The successful candidate must ensure the department operates seamlessly in their absence, with effective staffing and labour management.
