Sofitel Melbourne On Collins is Melbourne’s ‘Hotel for the Arts’, blending French-inspired luxury with the best that Melbourne has to offer to live and enjoy life in the French Way. Located at 25 Collins street we have 363 rooms and suites, two bars, a very well regarded restaurant, an Executive Club Lounge and extensive Conference facilities. We have newly renovated staff facilities including staff restaurant, newly refurbished locker rooms and a new leisure room where you can relax or challenge your colleagues to a game of pool.
Qualifications & experience
- Strong leadership skills developed in a similar operation with a customer centric mindset
- Demonstrated skills in leading, inspiring and developing a team
- Maintain awareness of industry trends in service, product and presentation and have the aptitude for developing promotions and marketing strategies
- A valid Responsible Service of Alcohol certificate
- Demonstrate versatility in responding to guest requests and situations to enhance the guest experience
Tasks & responsibilities
- Achieve a level of service quality and professionalism that consistently meets and preferably exceeds the expectations of guests.
- Supervise and support Ambassadors to ensure standard of procedures are observed and to provide a consistently high level of service to all customers on a shift basis.
- Ensure cleaning and maintenance of Restaurant, work areas, tableware, utensils and other materials and equipment used by restaurant / bar;
- Liaise with Chefs and other Outlet Managers on promotional and incentive activities with a view to increasing market share and return business.
- To maintain open and honest communication with subordinates, peers and upper management.
- Participate in scheduled training and development programs provided by the property to improve self and department standards and attend departmental meetings as required.
- Identify and deal with issues, which may cause cross cultural conflict or misunderstanding.
- Supervise and monitor all labour reports and ensure corrections are followed through.
- Any other such duties that may from time to time be assigned by the Restaurant Manager.
- Adherence to Emergency Communication procedures ensuring that enquiries from the media are only responded to by the nominated spokesperson
- Carry out all administrative duties in an accurate manner and meet all relevant deadlines.
- Assist the Restaurant Manager to forecast and plan to ensure efficiency and cost effectiveness with maximum yield.
- Ensure all revenues for the day are accounted for with daily summary being completed to 'balance' daily activity.
- Set examples for grooming as per Sofitel Melbourne guidelines and enforce where and when needed.
- Supervision and support of employees to ensure standards and procedures are observed to provide a consistent, high level of service for all customer contact.
- Develop and co-ordinate action plans for each section of the department to improve productivity and maximise revenue opportunities.
- Maintain awareness of local / industry practices in food and beverage production and service and attends industry functions as appropriate promoting professional image of property and department.
- Participate in weekly and daily meetings to maintain effective interdepartmental communications and relations.
- Maintain procedures to minimise our impact on the environment and prevent pollution.
- Maintain standards of hygiene for food handling and presentation as prescribed by council regulations.
- Develop and implement promotional activities to capitalise on events and/or seasonal activities.
- Liaise with product suppliers as appropriate, via purchasing.
- Maintain product knowledge of all food, drinks and wine lists in order to advise and make recommendations to guests. Use every opportunity to maximise sales.
- Serve beverage items with flair and professionalism according to company standards.
- Ensure that there is adequate coverage at all times, review the roster in the absence of the manager and make changes if business demands it.
- Ensure all service areas and equipment are kept clean and organized.
- Ensure revenue for the shift is accurately accounted for, with cash/charge summary being completed to balance daily activities.
- To develop a complete understanding of the overall operations of Hotel’s Food & Beverage outlets and work closely with the management to ensure smooth and efficient service of guests.
