We are seeking a capable and motivated Catering & Food Services Supervisor on a permanent full-time basis to support the team at Parklea Correctional Centre (PCC).

**About the Role**
The Senior Catering & Food Services Supervisor contributes to the technical oversight of the catering and food services function across the Parklea Correctional Centre. The Senior Catering & Food Services Supervisor provides experience, instruction, supervision and support to inmates who are employed in the area of catering and food services. This role ensures that nutritious and compliant catering and food services are delivered to the Centre. It also assists with improving the skills and work ethic of inmates, helping them to productively contribute to the operations of the Centre, whilst meeting MTC Australia’s targets and objectives.
**Key Responsibilities**
- Daily operation and organisation of the onsite kitchen, including food orders and delivery, inmate work
- activities and schedules, inmate supervision, inmate training and mentoring and adherence to Food Safety
- Standards (ISO 22001).
- Oversees and supports inmates to learn new skills to be able to prepare cook-chilled meals, pack breakfast ration packs and make fresh sandwiches and wraps.
- Ordering, tracking, receiving, and storing kitchen stock and deliveries.
- Coordinate catering for internal events, including staff training days and conferences, it also supports catering provided through the onsite canteen.
- Have a strong focus on safety and be results driven, while possessing the ability to motivate, engage and educate others.
- Develop and manage culturally, linguistically, and intellectually diverse inmates.
- Respond to events and incidents immediately and appropriately within a dynamic environment; exercise good judgment; and use interpersonal skills to influence behaviour and manage potential conflict.
- Comply with MTC Risk Management, Quality Assurance, and Health, Safety and Environment management systems, including all statutory obligations.
**Mandatory requirements**:
- Obtain appropriate security clearances from New South Wales Police and Correctional Services New South Wales.
- Meet the physical requirements of the role and pass a functional fitness and health assessment; due to the demands of the role, applicants who consume alcohol excessively, abuse prescription drugs or consume illicit substances are unsuitable.
- Previous experience in a supervisory role within a kitchen environment, including staff support and mentoring skills.
- Previous exposure to the requirements of the Food Safety Standards and HACCP practices; and a working knowledge of them.
- Demonstrated experience in managing and developing a team of people, including staff support and mentoring skills.
- Must hold a Certificate III (or above) in Commercial Cookery (or similar) or a Certificate III (or above) in Catering Operations (or similar).
- Must hold a Food Safety Certificate.
- Must obtain and maintain a First Aid accreditation, in the form of a current Statement of Attainment for HLTAID003 Provide First Aid.
- Must obtain and maintain a National Police Check.
**Desirable requirements**:
- Demonstrated previous experience working in a similar role at a correctional centre, or within an institutional environment.
