**Bakery and Patisserie Production Manager**

Are you a highly experienced **bakery and patisserie professional** with proven **supervisory experience** ready to take on a critical founding role? Roundtable Supply Co. is seeking a **Bakery and Patisserie Production Manager** to be the principal operational leader for our brand-new production facility.

This is an inaugural, highly **hands-on** position that requires qualifications and prior experience in both **pastry** and **sourdough production**. You will be accountable for successfully establishing, commissioning, and optimizing the facility from day one, while also managing the daily production, system setup, and distribution readiness for all bakery products.

**What You'll Be Doing**:

- Serving as the principal operational leader, overseeing daily production and managing system setup and distribution readiness.
- Leading the **successful establishment, commissioning, and documentation** of the new facility for maximum efficiency within the first quarter.
- Directly executing operations and strategic planning to ensure the **timely delivery of consistently superior quality products**.
- Driving recipe development and implementation to ensure superior quality croissant, pastry, and sourdough products are consistently produced according to **strict specifications and schedules**.
- Establishing and actively maintaining **robust Food Safety (HACCP) and WHS systems** to ensure 100% compliance.
- Building, efficiently rostering, and training a **collaborative and highly skilled production team** to support scalable growth.
- Executing production operations and resource management with optimal efficiency to achieve profitability targets, including **Cost of Goods Sold (COGS) control**.

- **Successfully led the startup, commissioning, or substantial restructuring** of a food production facility, with details on equipment validation and workflow optimisation.
- Implemented a **Continuous Improvement initiative** that measurably reduced ingredient waste or production labor hours per unit.
- Developed or scaled the production of **highly technical products** like laminated dough or long-fermentation sourdough, maintaining quality consistency across high-volume batches.
- **Established or significantly improved a documented food safety system (HACCP)**, detailing measurable improvements in compliance or reduction in quality failures.
- **Successfully trained and mentored new production teams**, resulting in measurable improvements in product output, error reduction, or team retention.
- Successfully managed the **product development lifecycle for new food lines** that met market trends and customer needs.
