- The Stewarding Manager is an integral part of the Food & Beverage team. This person supervises day-to-day operation of the hotel's stewarding department. The Stewarding Manager is responsible for overseeing the stewarding team to ensure the cleanliness, organization, and maintenance of all kitchens, dishwashing areas, and back-of-house operations. This role plays a key part in ensuring compliance with sanitation standards, inventory control, and operational efficiency while supporting the Food & Beverage department’s overall success.
**Key Responsibilities**
- Operational Management:
- Oversee the daily operations of the stewarding department, ensuring all kitchens, back-of-house areas, and food preparation areas are clean, sanitized, and organized.
- Ensure that all cleaning, washing, and sanitation procedures meet hotel standards and local health & safety regulations.
- Maintain dishwashing machines, kitchen equipment, and storage areas, ensuring proper usage and care.
- Work closely with the Culinary and F&B teams to ensure smooth and efficient operations.
- Inventory & Cost Control:
- Monitor and control inventory of cleaning supplies, dishware, glassware, and kitchen utensils to minimize breakage and loss.
- Work with the Purchasing and Finance departments to ensure proper procurement and cost management of stewarding-related items.
- Maintain accurate records of chemical usage, equipment maintenance, and supply inventory.
- Team Leadership & Training:
- Lead and supervise the stewarding team, ensuring high levels of engagement, productivity, and efficiency.
- Train and develop team members on cleaning procedures, hygiene standards, equipment handling, and safety protocols.
- Schedule and assign duties to ensure proper coverage for all operational needs.
- Conduct regular performance evaluations and provide coaching and feedback.
- Hygiene & Safety Compliance:
- Ensure compliance with hotel hygiene policies, HACCP guidelines, and local health and safety regulations.
- Conduct regular inspections of all stewarding areas to ensure cleanliness and sanitation.
- Ensure safe handling and proper usage of cleaning chemicals and maintain Material Safety Data Sheets (MSDS).
- Implement procedures for waste disposal and recycling programs in line with sustainability initiatives.
- Cross-Departmental Collaboration:
- Coordinate with Chefs and F&B Managers to anticipate operational needs and provide necessary stewarding support.
- Partner with Engineering for any necessary equipment repairs or maintenance.
- Work closely with Purchasing and Finance to manage costs and stock levels effectively.

- Proven experience as a Stewarding Manager, Chief Steward, or similar role in a hotel or high-volume restaurant.
- Strong knowledge of sanitation and hygiene regulations, including HACCP and local health codes.
- Ability to manage inventory and cost controls effectively.
- Experience in leading and developing a diverse team.
- Excellent organizational and multitasking skills.
- Strong communication and problem-solving abilities.
- Familiarity with stewarding equipment, chemicals, and dishwashing operations.
