**Key Responsibilities**

The Baker will be responsible for a variety of tasks, including but not limited to:

- Conducting pre-production checks to ensure all baking equipment is clean, sanitised, and in proper working order, and that the premises meet occupational health and safety (OH&S) and food safety standards.
- Assessing the quality and freshness of raw materials and accurately measuring ingredients in accordance with standard recipes and production requirements.
- Manually and mechanically kneading, maturing, mixing, cutting, moulding, and shaping dough for donuts
- Preparing and portioning pastry fillings, ensuring consistency in texture, flavour, and adherence to product specifications
- Monitoring and adjusting frying temperatures as needed, observing the appearance of products to determine appropriate frying times
- Overseeing the production flow, including cooling decorating and display of donuts
- Operating a variety of commercial equipment, including mixers, dough moulders, donut fryers, ensuring safe and efficient use
- Glazing, filling and decorating donuts with cream, icing, and other decorative elements
- Ensuring all products meet the visual and taste quality standards of Dougie’s Donuts
- Emptying, cleaning, sanitising, and greasing baking trays, and other cooking equipment in line with food safety procedures.
- Performing regular equipment checks and maintenance reporting, identifying any issues to prevent downtime.

**Skills & Experience**

**Essential**:

- Proven experience working as a Baker, preferably in a commercial bakery or donut shop.
- Sound knowledge of dough handling, fermentation, and baking techniques.
- Familiarity with commercial bakery equipment and safe operation.
- Understanding of HACCP principles and OH&S regulations.
- Ability to work early mornings, weekends, and public holidays as required.
- Strong attention to detail and consistency in product quality.

**Desirable**:

- Certificate III in Baking or equivalent (or working towards).
- Experience in high-volume production.
- Creativity in flavour development and decoration.

**Personal Attributes**
- Reliable and punctual with strong time management skills.
- Team-oriented with good communication skills.
- Passionate about baking and producing high-quality goods.
- Able to work under pressure and meet production targets.

**Working Conditions**
- 5-day working week, Sunday to Thursday, starting at 12 am each shift.
- Exposure to hot equipment and baking environments.
- Manual handling of ingredients, equipment, and trays is required.

Pay: $77,000.00 per year
