Originally built in 1873, we have kept all the best parts of the historic two levels and added a new rooftop bar, a mini paradise in the heart of Woolloomooloo.

This person will be responsible for all areas of stock control, including ordering/ receiving, stock movement, staff training, leading from the front & with high visibility during peak trading times, and ultimately the link between the front-line cellar team, and the management team.

**As the Cellar Manager you will**:

- Stock control - including ordering/ receiving and stock movements as well as oversee stocktakes.
- Ensuring invoicing and cost controls are up to date and maintained
- General deliveries of good and services including HACCP controls
- Be responsible for facilitating & upskilling bar back + glassy team in cellar operations as well as fostering team culture and guest relationships
- Ensuring systems + procedural compliance including cellar cleanliness
- Staff induction schedules + training
- Operational compliance audits
- Ensure WHS compliance
- General repairs and maintenance
- Ensuring all delivered product is of the highest quality

**About you**
- Experienced in Hotel & Retail stock inventory, including using purchase orders invoices
- Demonstrate Repair and Maintenance knowledge
- Experience in Food & Beverage stocktake
- Sound understanding of Ordering & Budget control
- Have Cellar & Beer Line maintenance knowledge
- Strong WHS knowledge
- Cash handling ability
- General hotel operation / management experience
