**Job Summary**:
The Fish Filleter is responsible for preparing fish by cleaning, cutting, and filleting to meet production standards. This role requires precision, attention to detail, and adherence to health and safety guidelines.

**Key Responsibilities**:

- Inspect and sort incoming fish to ensure quality standards are met.
- Clean, gut, and fillet fish according to company specifications.
- Use knives and other tools to fillet fish efficiently and accurately.
- Ensure that fillets meet weight, size, and quality specifications.
- Maintain a clean and sanitary workstation, following food safety regulations.
- Monitor equipment for proper functioning and report any issues.
- Work collaboratively with the production team to meet daily production targets.
- Adhere to all company policies and procedures, including health and safety guidelines.
- Assist in other production areas as needed.

**Qualifications**:

- Previous experience in fish filleting or a similar role is preferred.
- Knowledge of different fish species and filleting techniques.
- Ability to use knives and other filleting tools safely and efficiently.
- Strong attention to detail and commitment to quality.
- Good hand-eye coordination and manual dexterity.
- Ability to work in a cold environment and stand for extended periods.
- Willingness to work flexible hours, including early mornings and weekends if necessary.

**Physical Requirements**:

- Ability to lift and carry up to specific weight.
- Standing, bending, and repetitive motion for extended periods.
- Comfortable working in a cold and wet environment.
