**About the Opportunity**

Reporting to the General Manager on Christmas Island you will provide leadership to a highly productive team, who are committed to delivering a quality, varied and healthy menu which considers the religious, dietary, cultural and medical needs for all detainees at the centre. You will be involved in vital provision planning, forecasting the needs of the operation from a catering perspective and work in partnership with the warehousing team to ensure that ingredients are sourced in and stored in an effective and consistent manner. Strong financial and business acumen, including a good understanding of profit and loss, budgeting and reporting will also be required in this role.

On a day-to-day basis, this role will interact with both managers, employees, detainees and internal & external stakeholders at all levels. In addition to engaging employees, you will also need to manage performance as required.

This is a fulltime permanent position located on Christmas Island. Accommodation will be provided, please note you will be required to relocate to this island, this is not a fly in fly out position.

**What you’ll be doing**
- Running the catering department in its entirety
- Allocate roles to all catering staff
- Ensure all catering obligations are met in a timely manner
- Management of inventory and assets within catering areas
- Ensuring vendors are supplying what is required in a timely matter
- Supporting the site with catering needs
- Support and training all catering staff

**About you - your ideal skills & experience**
- You will hold a Certificate III or higher in Hospitality (Commercial Cookery or Trade Qualifications)
- Hold an Up-to-date Basic Food Hygiene / Food Safety Handling Certificate - SITXFSA001 Use Hygienic Practices for Food Safety OR SITXFSA101 - Use hygienic practices for food safety OR SITXOHS002A - Follow workplace hygiene procedures
- Have extensive experience overseeing a large catering operation as Sous, Head Chef or Manager
- Have high production catering experience within defence, corrections, immigration, or similar environment is preferred
- Have exceptional verbal and written communication skills
- Hold a current full Australian Driver’s Licence
- This is a position of trust and responsibility and to support this we will conduct a thorough probity assessment, which includes a Federal police check as an essential selection component for this role._
