Health Icons is an Australian CDMO dedicated to nutraceuticals and sports nutrition. Our new Gold Coast facility specialises in advanced gummy manufacturing supported by rigorous quality systems. We are seeking a **Food Technician specialising in gummies** to focus on formulation development, scale-up, and production support. Experience in gummy manufacturing is essential.

Key Responsibilities
- Develop, trial, and optimise gummy formulations in line with project briefs, commercial objectives, and agreed timelines.
- Conduct bench-top experiments and scale findings into pilot and full production runs, validating process parameters and establishing robust SOPs.
- Lead the transition of new gummy formulations from concept through to full-scale production, ensuring reproducibility and identifying risks early.
- Ensure compliance with FSANZ standards, HACCP/GMP frameworks, and allergen/labelling regulations throughout formulation and production.
- Prepare and maintain accurate technical documentation including formulations, NIPs, CoAs, batch records, and change controls.
- Oversee QA/QC checks during gummy trials and production, driving improvements in yield, stability, texture, and overall product quality.
- Partner with Production, QA, Supply Chain, and Procurement to troubleshoot runs, improve efficiencies, and secure cost-effective ingredient and packaging solutions.
- Research and evaluate new hydrocolloids, sweeteners, flavours, and technologies to enhance gummy performance and maintain industry leadership.
- Support client tastings and technical discussions by providing clear data, reports, and recommendations on gummy development outcomes.

About You
- Tertiary qualification in Food Science/Technology, Nutrition, Pharmaceutical Science or related discipline.
- Hands-on experience in **gummy production** (pectin-based preferred).
- Strong knowledge of hydrocolloids (pectin/gelatine/gellan), sweeteners (including polyols), pH/BRIX management, and water activity.
- Familiar with FSANZ regulations, labelling requirements, and quality systems (HACCP, GMP).
- Practical, detail-oriented, and comfortable working across lab trials, documentation, and the production floor.

How to Apply

Pay: $75,000.00 - $110,000.00 per year

Expected hours: 30 - 50 per week
