Raes on Wategos, a luxury boutique hotel and renowned dining establishment in Byron Bay, is seeking a skilled and dedicated Chef de Partie to join its esteemed kitchen team under the guidance of Executive Chef Jason Saxby.

The ideal candidate will possess a strong passion for great food and exceptional guest service, with a minimum of 3 years of full-time experience in high-end restaurants and international luxury hotels.

Main Responsibilities:

  • Collaborate with Head and Sous Chefs to create innovative and distinctive dishes.
  • Contribute to a creative and professional menu presentation.
  • Manage food costs through portion control and waste reduction.
  • Ensure food safety for guests with special diets.
  • Implement stock rotation and shelf-life criteria.
  • Participate in brainstorming sessions and discuss new menu ideas.
  • Maintain high standards of food quality, presentation, and taste.
  • Develop service procedures and timings with the Sous Chef.
  • Assist the Sous Chef in recruiting, inducting, and training kitchen staff.
  • Receive and inspect the quality of cooking materials.
  • Ensure compliance with food safety and sanitation regulations.
  • Establish high standards for food storage, kitchen cleanliness, and safety.
  • Minimize energy waste and maintain kitchen equipment.
  • Ensure the kitchen operates profitably and efficiently.
