Senior Culinary Specialist

We are seeking an accomplished Culinary Professional to drive culinary excellence and passion for exceptional cuisine in our kitchen.
Key Responsibilities:- Collaborate with our Executive Chef to craft menus showcasing seasonal ingredients and Japanese flavours.
- Manage food costs, oversee stock levels and coordinate kitchen operations effectively.
- Monitor every step of dish preparation and presentation, ensuring impeccable quality standards.
- Prepare and cook dishes to the highest standard, consistently delivering memorable dining experiences.
- Maintain stringent cleanliness and sanitation practices, guaranteeing a pristine kitchen environment.
- Develop and mentor a skilled kitchen team, fostering a culture of growth, collaboration and innovation.
- At least 3 years' experience in high-volume, casual fine dining with a Certificate IV (or equivalent) in Commercial Cookery.
- Strong punctuality, honesty and commitment qualities are essential.
- Able to thrive in a fast-paced, collaborative environment where teamwork drives culinary excellence.
- Familiarity with rostering, COGs, P&Ls and behind-the-scenes operations is necessary.
- Knowledge of modern and traditional techniques, combined with a passion for authentic flavours, is highly valued.
- A natural ability to engage with guests, manage a busy open kitchen and present a polished, professional image is required.
- Willingsness to adapt to changing demands and work flexible hours, including nights, weekends and public holidays.
