Job Overview:
To successfully execute and maintain the kitchens and food offerings of a hotel in line with established operational procedures.
Key Responsibilities:
- Maintain all documentation related to food safety and digital programs as per EVT standards.
- Regularly inspect kitchen equipment to ensure it is in good working order.
- Ensure the cleanliness and maintenance of all kitchens adhere to high standards following specific cleaning rosters and guidelines.
- Keep up-to-date records of kitchen staff’s annual leave, timesheets, and payroll in accordance with EVT schedules.
- Manage kitchen staff to foster a harmonious work environment.
- Coordinate rostering and staffing requirements within budgetary constraints.
- Collaborate with the Executive Chef in developing menus aligned with the hotel’s food narrative.
- Develop standardized recipes and menus for high-quality food standards.
- Accurately cost dishes, recipes, and menus for all hotel food outlets.
- Ensure food across kitchens meets the highest quality standards.
- Monitor food stock levels adhering to COGs budgets.
- Maintain relationships with suppliers and producers to secure optimal pricing for the hotel.
- Work closely with outlet managers and F+B management to ensure smooth service both front and back of house.
- Address customer needs and requests to the best of the kitchen's ability.
