Executive Chef - Italian Restaurant

Cable Beach Club Resort and Spa is located on the world famous Cable Beach in Western Australia, easily accessible by plane to all major Australian cities. Our property has 225 rooms of varying styles, 4 restaurants, 2 pool side bars, banquet department, tour desk, resort shop and a full service Day Spa.

We are seeking a strong leader to assume the position of Executive Chef, in our fine-dining Italian restaurant, Cichetti Club. You will be responsible for ensuring that product quality, presentation, and service levels are of the highest standards at all times.

Key Responsibilities:
  • Maintain high standards of food quality, presentation and service levels.
  • Train and mentor junior chefs and apprentices.
  • Supervise/manage large kitchen brigades of up to eight staff.
  • Adapt to change and lead change processes as required.
  • Work collaboratively with the greater Resort team.
Requirements:
  • Experience in fine dining, hatted restaurants preferred.
  • Knowledge of broad Italian cuisine.
  • Experience in making fresh pasta.
  • Ability to present meals with flair and theatre in the dining room.
  • Experience in cost control and menu creation.
  • Thorough knowledge of workplace health and safety practices.
  • Formal qualifications in Commercial Cookery.
  • Well-developed communication and time management skills.
  • High standard of personal presentation and grooming.
