Key Position:

This role is integral to delivering culinary excellence within a fast-paced hotel environment.

The position requires a strong technical skillset, leadership abilities and a passion for providing luxurious dining experiences.

  • Prepare, cook and present high-quality dishes according to menu guidelines.
  • Maintain the mise-en-place, freshness and readiness of assigned kitchen sections.
  • Ensure presentation, portioning and quality standards are consistently upheld.
  • Lead, mentor and train junior kitchen staff.
  • Collaborate with colleagues and other sections to ensure smooth service delivery.
  • Manage inventory, ordering and stock rotation in assigned sections.
  • Enforce exceptional hygiene, food safety and OH&S protocols.
  • Promote a positive, professional and harmonious team environment.
  • Remain composed under pressure during peak service periods.
  • Support menu development, innovation and implementing changes when required.

Required Skills & Qualifications:

  • Hold a Certificate III in Commercial Cookery or equivalent qualification.
  • Minimum 2–3 years' experience as a Chef de Partie or senior cook, preferably within a hotel/banquet/restaurant setting.
  • Flexibility to work across a rotating roster including mornings, evenings, weekends and public holidays.
  • Hold relevant work rights/work visa in Australia.
