Job Summary: We are seeking a skilled and experienced butcher to join our team. The successful candidate will be responsible for the daily operations of the butchery, overseeing all facets of the operation from inventory ordering, stock management, training staff, and managing costs.

About the Role: As a butcher, you will lead a diverse team of qualified butchers, maintaining a tight control on all aspects of product quality and operation. You will prepare quality fresh meat products to company specified guidelines and time frames, operate machines to grind, mix, mince, and tenderise meat, and make seasonings and pickles by mixing spices, salt, and other ingredients.

Duties and Responsibilities:

  • Prepare and produce quality fresh meat products to company specified guidelines and time frames
  • Preparation of meat for sale by removing bones, trimming fat, and cutting, mincing, and grinding meat to shape and size for display or as ordered
  • Selecting and preparing meat to produce smallgoods
  • Operating machines to grind, mix, mince, and tenderise meat
  • Making seasonings and pickles by mixing spices, salt, and other ingredients
  • Maintaining a high standard of housekeeping within the Meat Department

Requirements:

  • AQF Certificate III in Meat Processing (Butchery) or higher
  • At least 3 years recent and relevant work experience
  • Knowledge of using processing equipment to manufacture butchery products (grinders, bowl cutters, slicers, fillers, smoking ovens)
  • Good verbal and written communication skills
  • To maintain a high level of hygiene
