Catering Manager - AAMI Park Stadium

We are seeking a highly skilled and motivated Catering Manager to lead our hospitality operations at AAMI Park in Melbourne.

AAMI Park is nestled in the heart of the Melbourne and Olympic Parks Precinct, hosting global acts with unforgettable performances.

The ideal candidate will take full ownership of end-to-end catering operations, including public catering, corporate hospitality, and non-event day services.

As a key member of our team, you will lead a high-performing team, optimise financial outcomes, and ensure every guest experience is nothing short of exceptional.

Key Responsibilities:

  • Strategic & Financial Leadership: Align catering operations with business goals and drive profitability.
  • Operational Excellence: Maintain high standards in food safety, quality, and service while ensuring compliance with our Integrated Management System (IMS).
  • Team Development: Lead, train, and inspire a diverse team to deliver top-tier service and grow within the business.
  • Stakeholder Engagement: Collaborate with venue partners and event stakeholders to plan and execute seamless events.
  • Sales & Cost Control: Drive non-event day sales and manage stock and overheads.
  • Labour & Resource Management: Oversee staffing plans and support broader catering operations as needed.
Requirements

Proven experience in catering management, ideally in stadiums or large-scale events.

Strong commercial acumen with P&L management experience.

Deep understanding of food safety including HACCP principles.

Exceptional leadership, communication and interpersonal skills.

Proficiency in inventory, labour forecasting, and budget control.

Ability to thrive in a fast-paced environment, managing multiple priorities and adapting to changing event requirements.
