Job Title:

Assistant Director of Food and Beverage

Overview:

The Assistant Director of Food and Beverage is a key leadership role responsible for the day-to-day operations of all hotel food and beverage outlets.

Key Accountabilities:

  • Provide hands-on approach to coordination and management of food and beverage operations.
  • Manage F&B Outlet Managers/Supervisors to ensure duties and responsibilities are performed to standard.
  • Maintain high level of visibility, monitor service delivery, and assist in operations as required.
  • Regularly report on status of outlets and activities influencing trade and outlet operations.

Responsibilities:

The Assistant Director of Food and Beverage will be responsible for:

  • Managing daily operations of food and beverage outlets.
  • Ensuring safety of staff and patrons while on premises.
  • Implementing Responsible Service of Alcohol policies.
  • Maintaining hygienic food handling practices and cleanliness of waiting and bar staff.
  • Guiding and developing management skills of outlet managers/supervisors and team.

Financial Objectives:

The Assistant Director of Food and Beverage will drive financial objectives including:

  • Managing wage costs within budget guidelines.
  • Driving customer spending above agreed targets.
  • Monitoring daily revenue analysis reports for accuracy.

Sales and Marketing Objectives:

The Assistant Director of Food and Beverage will also focus on sales and marketing objectives including:

  • Staying abreast of current market trends for wine and food.
  • Developing promotional activities and programs for food and beverage outlets.
  • Working with sales and marketing teams to drive success.

Customer Service Objectives:

The Assistant Director of Food and Beverage will provide efficient, friendly, and professional service to guests, ensuring:

  • High level of consistency in quality customer service.
  • Review and respond to guest feedback in timely manner.

Personnel and Training Objectives:

The Assistant Director of Food and Beverage will work with outlet managers to ensure new staff are effectively inducted, support the executive chef in maintaining a harmonious environment between kitchen and floor, and recruit new staff by screening applications and participating in interviews.

Systems and Processes Objectives:

The Assistant Director of Food and Beverage will ensure all Point of Sale data is up to date and in line with menus, log and inform IT of any system problems, and respond to all emails in timely manner.
