  • Develop and implement new menu items, while mentoring junior staff and maintaining high standards of culinary excellence.
  • Oversee kitchen operations, including à la carte, buffet, cold larder, mise-en-place, and banquets, ensuring seamless execution and exceptional dining experiences.
  • Collaborate with the culinary team to develop and implement new recipes, menu items, and cooking techniques, staying up-to-date with industry trends and culinary best practices.
  • Supervise, train, and develop the kitchen brigade, fostering a positive and inclusive work environment.
  • Ensure compliance with food safety regulations, maintaining a clean and organized kitchen environment.

Requirements:

  • Trade qualifications and previous experience in the hotel industry, preferably in a senior culinary role.
  • Knowledge of food safety requirements and regulations.
  • Excellent time management and multitasking skills, with the ability to work under pressure.
  • Strong interpersonal skills, with the ability to communicate effectively with all levels of team members.
  • Ability to work a rotating roster, including evenings, weekends, and public holidays.
