Bird's Basement Pastry Cook Job Description

Bird's Basement, a renowned jazz venue in Melbourne's vibrant heart, is seeking a skilled Pastry Cook to lead our Patisserie section. As a key member of our culinary team, you will be responsible for creating an array of delectable desserts and baked goods that complement our exceptional jazz performances and refined bar experience.

Key Responsibilities:

  • Organize and prepare the pastry section for daily services, ensuring seamless execution and high-quality output.
  • Cook a variety of food items assigned to the pastry section, including checking quality, preparing ingredients, mixing dough and pastries, and operating commercial bakery equipment.
  • Develop and implement creative ideas and recipes to enhance our dessert offerings.
  • Maintain a clean and safe work environment, adhering to occupational health and safety regulations.
  • Manage ordering and Patisserie Section stock control, ensuring efficient inventory management.

Requirements:

  • Experience working in a fast-paced patisserie section of a CBD restaurant.
  • Demonstrable skills in desserts, including chocolate, pastry, and ice cream products.
  • International artisan baking experience.
  • Minimum Certificate III in Patisserie or equivalent, with at least two years of on-the-job training or relevant experience.
  • At least two years of full-time equivalent pastry cook experience.
  • Experience working with Market Boomer/Purchase Plus stock ordering system.
