Job Title: Senior Culinary Leader

We are seeking an experienced culinary professional to assume a leadership role in our kitchen operations.

Key Responsibilities:

  • Assist the Executive Chef in training and mentoring chefs, cooks, and kitchen personnel in preparing and cooking food to ensure efficient and profitable food service.
  • Inspect and test cooked food products to meet quality standards as set by departmental standards and health regulations.
  • Ensure proper receiving and storage of food products to comply with health department regulations and standard FIFO regulations.
  • Participate in planning menus and utilizing food surpluses and leftovers, considering probable number of guests, marketing conditions, and popularity of various dishes.
  • Direct food apportionment policy to control costs.
  • Supervise cooking and other kitchen personnel and coordinate their assignments to maximize net returns while maintaining satisfactory Guest Service levels.
  • Help estimate food consumption and purchases or requisition food products and kitchen supplies.
  • Observe methods of food preparation and cooking to ensure food is prepared in a prescribed manner.

Requirements:

  • Minimum 2-3 years' experience in high-volume full-service food operations.
  • Banquet and ala carte experience preferred.
  • Must be detail-oriented, extremely organized, and able to multi-task.
  • Excellent written and verbal communication skills and ability to prioritize in a deadline-oriented environment.
  • Customer service oriented with ability to interact with all levels of management.
  • Flexible to work extended hours due to business requirements.
  • Required to lift and carry items up to 35 lbs. and repetitive motions.

Education and Experience:

  • The ideal candidate must have a minimum of 2-3 years' experience in the food service industry, preferably in high-volume full-service food operations.
