Job Title: Manager, Culinary Operations

About the Role:

We are seeking an experienced and results-driven leader to oversee all culinary and operational functions within our high-volume commercial production kitchen. This will include leading the senior leadership team to meet objectives, ensuring accuracy in recipes and menus, and overseeing all operational and service delivery activities.

Main Responsibilities:

  • Act as a senior member of the leadership team, lead and represent all objectives for the culinary operations
  • Provide professional and effective direction for all culinary team members
  • Mentor and lead kitchen managers, including Executive Chef and Exec Sous Chefs
  • Oversee all operational and service delivery activities to ensure timely completion of tasks and meeting of production schedules
  • Ensure accuracy in recipes and menus, prepared and finished to customer presentation and specification standards
  • Plan and forecast manpower requirements for the culinary operations
  • Responsible for managing budget and resources for the culinary operations
  • Lead continuous improvement agenda aligned to customer airline and their specific service requirements
  • Develop culinary staff, providing continuous feedback, performance evaluations, and opportunities for skill development

Requirements:

  • Demonstrated success in managing large commercial food service operations
  • Proven leadership experience to manage teams of 200+ personnel
  • Exposure to airline catering operations preferred but not essential
  • Financial understanding of large P&Ls
  • A strong level of leadership agility, diplomacy, and ability to resolve complex problems
  • Results-driven and ambitious with a lead-by-example approach
  • High-level understanding of Food Safety / WHS and Quality Assurance
  • Good PC skills and ability to work with automated time and attendance systems and other business-related systems
