About the Role:

The Lancemore Hotel Group is seeking a skilled Pastry Chef to join our team in a stunning hotel based in the scenic Red Hill. As a key member of our kitchen team, you will be responsible for the preparation and assembly of desserts across the pastry section. Reporting to the Sous Chef, you will work closely with other staff members to ensure smooth operation and timely service.

Key Responsibilities:

  • Recipe Development: Develop and refine recipes, experimenting with ingredients and techniques to innovate new pastry offerings.
  • Quality Control: Inspect equipment and premises for cleanliness prior to production runs, ensuring compliance with occupational health and safety regulations.
  • Inventory Management: Manage inventory of ingredients and supplies, placing orders as needed to ensure uninterrupted production.
  • Food Preparation: Knead, mature, cut, mold, mix, and shape dough and pastry products to create a variety of baked goods.
  • Team Collaboration: Collaborate with other kitchen staff to ensure smooth operation and timely service.

Requirements:

  • Certificate III in Commercial Cookery/Patisserie: A minimum of a Certificate III in Commercial Cookery/Patisserie.
  • Experience: 3 years of post-apprenticeship experience in a similar role in an a la carte hotel restaurant or functions kitchen will be highly regarded.
  • Planning and Organisational Skills: Strong planning and organisational skills to manage multiple tasks and deadlines.
