Executive Culinary Director

We are seeking a highly skilled and experienced Executive Culinary Director to join our team at Brady's Railway Hotel. As a key member of our culinary team, you will be responsible for maintaining the highest level of food standards and ensuring that every dish that leaves our kitchen is of the highest quality.

The successful candidate will have a minimum of two years of full-time experience as a qualified chef and a certificate IV in commercial cookery or similar. Alternatively, they may have at least three years of experience as a chef in a restaurant setting which can substitute the formal qualification.

Key Responsibilities:

• Plan innovative and seasonal menus that work well within our restaurant
• Undertake stock inventory and ordering food supplies
• Oversee meal standards from preparation to table service ensuring quality control
• Work with managers and all staff regarding food preparation issues
• Train cooks/chefs in food preparation techniques and cooking procedures
• Prepare, cook, and present dishes
• Maintain and enforce food hygiene and occupational health and safety standards
• Store, freeze, and preserve foods per safety regulations
