Executive Chef Role

Crowne Plaza Geelong is looking for an experienced Executive Chef to join its pre-opening team. As an Executive Chef, you will be responsible for establishing and directing all kitchen activities in the lead-up to hotel opening and beyond.

The ideal candidate will have a relevant degree or diploma in culinary arts and at least 5 years of experience as a chef, with a minimum of 1 year in a Head or Executive Chef capacity.

This role requires strong communication skills, strategic thinking, and the ability to manage competing priorities across multiple outlets. Additionally, the successful candidate will be fluent in English and have full working rights in Australia without restrictions.

Responsibilities:
  • Menu Development: Create menus that align with the hotel's concept, target audience, and culinary vision, including diverse options for various outlets such as restaurants, bars, room service, and banquet facilities.
  • Kitchen Setup and Organisation: Oversee the setup and organisation of the kitchen facilities, including designing the layout, selecting equipment, sourcing ingredients, and ensuring necessary permits and certifications are in place.
  • Team Management: Hire and train kitchen team members, including sous chefs, line cooks, and stewards, and establish performance and development goals for team members.
  • Sourcing and Procurement: Identify and establish relationships with suppliers, negotiate contracts, and ensure deliveries meet quality standards and budgetary constraints.
  • Quality Control: Maintain rigorous quality control standards to ensure dishes meet the hotel's culinary standards and guest expectations, conducting regular inspections and monitoring food safety protocols.
  • Financial Planning: Collaborate with management to establish pricing strategies for food and beverage items that are competitive yet profitable, and help prepare annual departmental operating budget and financial plans.
Requirements:
  • Certifications: Relevant degree or diploma in culinary arts.
  • Experience: At least 5 years' experience as a chef, with a minimum of 1 year in a Head or Executive Chef capacity.
  • Languages: Fluency in English, with other languages preferred.
  • Working Rights: Full working rights in Australia without restrictions.
