PhD Researcher in Digital Twin of Protein Extrusion for Plant-Based Meat Innovation

Project Overview
The Monash University and CSIRO collaboration is seeking a PhD researcher to develop a digital twin of the twin-screw extrusion process for plant-based meat innovation. This project aims to create a computational model that simulates the extrusion process, enabling the optimisation of conditions and enhancement of product quality attributes.
Key Responsibilities
- Investigate the influence of ingredient physico-chemical properties, extrusion operating parameters, and screw configurations on the rheological behaviour of food material throughout extrusion.
- Develop computational models for concentrated plant protein extrusion and conduct experimental studies at laboratory and pilot-scale for model validation.
- Collaborate with researchers from different disciplines, including food engineering, nutrition science, and social science of sensory experience.
Requirements
- Background in Mechanical/Chemical/Materials Engineering with familiarity in CAD or computational fluid dynamic modelling.
- Strong analytical and critical thinking skills for experimental design, data interpretation, and problem-solving.
- Excellent communication skills and ability to work independently and as part of a team.
