Your Hotel - Ovolo Woolloomooloo

Ovolo Woolloomooloo is the brand's flagship Australian hotel, located in Sydney's idyllic harbourside suburb of... (dramatic drum roll) Woolloomooloo. Nestled in the heart of the popular wharf precinct, a short walk to the city's central business district, the hotel is surrounded by a wide selection of much-loved dining and nightlife options. Ovolo Woolloomooloo features 100 guest rooms, a state-of-the-art gym, meeting rooms and events spaces, a swimming pool, and Bar Woolloomooloo.

The Gig

As our new Head Mixologist, you will not only design, create and implement all things cocktails, but you will lead the bar team to ensure we are providing the ultimate experience to our guests This is a Full-Time role operating on a 7 day rotating roster. Your responsibilities will include but are not limited to:

- Craft, innovate, and present exceptional cocktails for both hotel and external guests.
- Lead and inspire a dynamic bar team, remaining actively hands-on in operations and service.
- Uphold and drive high standards across procedures, service, and overall operations.
- Develop clear, practical, and effective beverage service standards and ensure seamless communication within the team.
- Maintain a clean, organized, and well-kept bar environment at all times.
- Act as a team builder—recruit, train, and mentor staff to achieve excellence.
- Define and adapt service level standards to enhance the guest experience.
- Build and nurture strong supplier partnerships.
- Assess and provide strategic recommendations on long-term planning, including new programs and initiatives.
- Establish, implement, and enforce policies that positively impact profitability while improving bar operations.

About you

We provide a fun and exciting environment and all we ask is that you give us your dedication to our brand and most importantly, your team As our Head Mixologist, you will have excellent knowledge of mixology and serving drinks with at least 3 years in a high-end cocktail environment. You will already have a working knowledge in P.O.S (Micros) systems or similar. You will come with a passion and willingness to learn, as well as a positive all-round attitude that will surely brighten up anyone's day. You will also have strong leadership qualities with the ability to work in a dynamic team.
