Occupation Tasks
Prepares, seasons and cooks food in a dining or catering establishment.

• Inspects and selects ingredients for cooking

• Measures, cleans, chops, blends, seasons, heats and cools food

• Monitors food cooking processes to ensure proper cooking and presentation

• Coordinates, supervises and collaborates with kitchen staff in food preparation and cooking

• Cleans and maintains kitchen equipment and utensils

• Monitors and maintains inventory of food supplies and equipment

• Assists in the development of new recipes and menu items

Skills & Experience

• Minimum 2 years' experience

• Food Preparation Skills: High level of quality & ability to understand amount required

• Knife Skills: High level of knife skills & what knife to use & when

• Basic Cooking Skills: Knowledge of cooking methods & when to apply

• Recipe following: able to read, train & replicate all dishes

• Examining foodstuffs to ensure quality

• Regulating temperatures of ovens, grills and other cooking equipment

• Preparing and cooking food

• Seasoning food during cooking

• Portioning food, placing it on plates, and adding gravies, sauces and garnishes

• Storing food in temperature controlled facilities

• Preparing food to meet special dietary requirements

• May plan menus and estimate food requirements

• May train other kitchen staff and apprentices

Compliance Requirements

• Complying with WHS systems & legislation

• Comply with Ember's policies and procedures.

• Ensure role is carried out in line with safe work practices.

Qualifications
Require Certificate 3 in hospitality
Basic food handling certificate
