We have an exciting role for a talented, experienced and passionateBeverage Manager to join our team and assist with management of the operational delivery of multiple beverage outlets, restaurants and events throughout our venues. The role is primarily looking after Rosehill Gardens and Canterbury Park racecourses, and the role will also support the business across our other three venues as required.

This role will require you to have a versatile, self-driven and a motivated outlook with a strong background working in a busy high-volume setting across multiple different beverage offerings with a focus on detail.

The Beverage Service Manager is responsible for assisting with strategic management and execution of all beverage services and outlets across Rosehill Gardens and Canterbury Park, the role also play's a supporting part to our other three venues (Royal Randwick, Warwick Farm and Rosehill Bowling Club) as directed and required due to operational needs by the Head of Beverage. The roles key functionality will be to work with the Head of Beverage to develop a creative beverage offering that delivers innovation and creativity to our members and guests but maintains a strong focus on profitability including overseeing cocktail and non-alcoholic offerings.

This leadership role requires the successful candidate to be working closely with the existing team in the continuation of developing and maintaining a vision for industry leading beverage services that exceed expectations, whilst also maintaining a focus on mentoring the venues beverage team for their professional growth to build and harvest a community of engagement and learning.

Key Accountabilities

- Assist and lead the cocktail and wine knowledge development process across our venues with the Head of Beverage, ensuring all new creations are rooted in classic technique with a balanced approach to innovation and creativity and team inclusion.
- Manage and deliver a productive and effective casual team workforce that is aligned to budgets, event needs and monthly KPI's
- Collaborate with the venue team to maintain consistency and excellence in beverage presentation and service inclusive of staff presentation as directed by the Head of Beverage.
- Monitor and control beverage costs across Rosehill Gardens and Canterbury Park venues, including maintaining acceptable stock levels and wastage records.
- Manage and control accurate end of month stocktakes with finance to meet business expectation and deadlines, insuring monthly KPIs are managed and aligned to budgets.
- Assist as required to standardise supplier relationships and ordering systems across the venues as requested by the Head of Beverage and be responsible for all stock ordering and cost of goods across Rosehill Gardens and Canterbury Park.
- Provide training and development for the beverage team and casual team members, focusing on service standards, product knowledge, and cocktail craftsmanship.
- Lead supervisor and team meetings within venue to assess performance, manage upcoming challenges, and discuss team needs.
- Set the tone for a culture of collaboration, high standards, and a can-do attitude, while creating a great culture amongst beverage team members and other departments that fosters teamwork, pride, and professional growth.

This is and hands-on role requiring the ability to move seamlessly and as required between venues, allocate time effectively, and provide leadership and support. The Beverage Manager ensures that the business is performing at a high standard and aligned with the overall vision of the Head of Beverage and business expectation. Success in the role will be measured through team engagement and development, performance reviews tied to our financial targets, operational consistency and guest satisfaction.
