**About the role**:
**_ We're searching for a Baker _**

**_ Night shift Bakers_** - Prepares all the product and prepare products for overnight delivery to Melbourne Stores

**What you'll bring to the role**:

- Quality of bread production
- Waste Management
- Follow Production plan & monitor ingredients requirements to meet production schedules
- Manage production to ensure no overproduction or shortage of products
- Monitor quality of raw ingredients, mixes and dough's & take corrective action if required
- Monitor product quality through moulding, proving and baking stages of production & take corrective action if required
- Monitor quality of finished bread products to ensure they meet standard specifications
- Follow procedures to ensure that food safety standards are maintained
- Assisting with HACCP and Health and Safety procedures.
- Work with other members of the Bakery team effectively
- Assist with training of Apprentices and Trades Assistants
- Receive work instructions on work paper and verbal order
- Measure and mix bread dough to product recipes
- Mould dough's into various bread styles (loaves, rolls, baguettes, sandwich etc)
- Prove breads
- Bake off breads and pastries (if required) as per production plan and product specifications
- Display the ability to work on all Bakery Equipment and perform all processes depending on bread type
- Monitoring of ovens and other machinery
