Carnival Australia is excited to announce an opportunity for an experienced Director of Food & Beverage and Product Development to join our P&O Australia team at our office in Chatswood, Sydney. In this full-time permanent role, you will report to the Vice President of Guest Experience - Hotel Operations. Your main responsibility will be to guarantee that P&O Cruises Australia's onboard F&B services are profitable and surpass guest expectations. You will achieve this by spearheading the delivery of innovative, high-quality, and consistent F&B products and services across all ships in the fleet, in accordance with the company's Environmental and Public Health standards.

**Your key responsibilities will include but are not limited to**:

- Lead operational activities, assignments, and projects for both shoreside and shipboard F&B management.
- Manage a team of enthusiastic and highly skilled individuals.
- Conduct a thorough review of all product offerings, processes, and policies to pinpoint areas for improvement and enhanced efficiency.
- Develop long-term strategies to boost operational effectiveness and guest satisfaction in shipboard F&B departments.
- Monitor all F&B costs to ensure operations stay within budget.
- Accountable for achieving and increasing F&B revenue targets.
- Conduct regular meetings with shoreside and shipboard hotel teams to convey policies, address issues, and coordinate solutions. Establish structured communication channels for seamless inter-team interaction.
- Regularly benchmark the cruise and hotel industry to stay abreast of product, service, and technical innovations.
- Provide insights on trends in food and beverage, hotel, and revenue areas, and evaluate their relevance to our product mix and onboard demographics.
- Evaluate the current performance of all F&B product initiatives and suggest new ideas to enhance guest satisfaction (NPS).

**About You**:
As the dedicated F&B Director for P&O Australia, you will embody a strategic leader with a sharp focus on achieving results in a dynamic setting. You will be a confident communicator who excels under pressure, and a trailblazer in stakeholder management. Your expertise in driving performance and innovative initiatives through data analytics will be complemented by your commitment to engaging and empowering your team and stakeholders to foster positive change and continuous improvement. This role will provide you with a prominent position within the organization, representing P&O across our various brands. It is a challenging yet rewarding position that thrives in a fast-paced environment, delivering exceptional guest experiences. To excel in this role, you need to demonstrate strong leadership, commercial acumen, influencing abilities, and the agility to adapt quickly with an entrepreneurial mindset, setting you apart from your peers.

**To be successful in the role, you will have demonstrated**:

- 10 years of operational management experience in the Food & Beverage industry.
- 5 years of experience in land-based Hotel operations.
- 10 years Leadership experience.
- Cruise industry experience is preferred, equivalent roles in tourism, hospitality, multichain hotel groups, or large catering companies are equally desirable.
- Comprehensive expertise in food and beverage operations, encompassing supply chain logistics, cruise ship galley operations, and various dining venues.
- Profound knowledge of beverage products, markets, pricing, trends, receiving, and inventory control procedures
- Proven track record in introducing innovative products that positively impact financial results.
- Skilled in building and leading successful teams through coaching and motivation.
- Proficient in financial management, including budgets, accruals, and forecasting.
- Strong analytical skills and a data-driven approach for strategic recommendations.
- Commercial acumen for evaluating and negotiating agreements and contracts.
- Proficient in project and time management with excellent verbal and written communication skills.
- Willingness to work flexible hours, including weekends, and travel regularly with multiple days away from home.
- Possession of a valid passport.
