Role

The Food & Beverage Manager coordinates and oversees the Food & Beverage outlets and the operational requirements of the conference & event venues. They facilitate effective communication between outlets, Conference & Events teams, the kitchen, guests, and other hotel departments. They lead by example, attend and conduct team meetings, coach and counsel, and respond to guest feedback. They empower their team to deliver outstanding guest experiences.

Key Responsibilities
  • Identify and grow revenue streams in all food & beverage departments with focus on spend per cover and capture rates.
  • Ensure adequate control systems for stock control, inventory management, stock requisition, and expenditure.
  • Analyze a departmental F&B P&L, including spend per cover and per occupied room and department profit margins.
  • Produce or oversee staff rosters on a fortnightly basis, maintaining wage costs to forecasts and budgets.
  • Build an engaged culture with focus on engagement, performance management, development and retention of team members.
  • Work with the Executive Chef to position menus for site and customer, cost menus and wine lists, and identify most profitable items.
  • Review and respond to guest feedback, developing and implementing solutions to service problems.
  • Forecast departmental revenue and labour costs around peak demand and events; develop marketing calendar and local initiatives; build a database of engaged customers.
  • Generate feasibility models for adhoc events or promotions (e.g., Mothers' Day, Melbourne Cup, Christmas Day luncheons).
  • Adhere to COVID Safe, WHS, hygienic food handling and RSA practices.
  • Research current market trends to identify growth opportunities for the F&B Department.
  • Provide concise monthly commentary on financial results of F&B departments.
  • Monitor the physical presentation of outlets and guest spaces to ensure appropriate ambience for each service period.
