Job Title: Head Chef

A great opportunity exists for a Head Chef to lead a team and continue to build, expand, and develop the menu at a popular regional Restaurant/Winery located on the Mornington Peninsula.

The owners are looking for someone who can bring new ideas to the table and help strengthen its reputation and increase the offering as a destination venue, while keeping its existing bustling trade coming back for what they love.

About the Role

This is a full-time position that offers a 'can do' attitude and requires someone who can tick the majority of items below:

Duties
  1. Plan and develop menus
  2. Estimate food and labor costs
  3. Liaise with suppliers and use seasonal and local produce
  4. Monitor the quality of dishes at all stages of preparation and presentation
  5. Ensure hygiene regulations are met
  6. Lead, train, and nurture staff with leadership skills
  7. Run your own kitchen autonomously
  8. Prepare and serve meals with pride
  9. Set a seasonal menu while introducing fresh ideas
  10. Manage and maintain stock efficiently
  11. Maintain records of expenses and wastage
  12. Keep the kitchen immaculately clean at all times
  13. Work at pace and be flexible with client requests

Skills & Experience

You will have at least a Certificate IV or 4 years of experience running a kitchen as a Head or Executive Chef.

Experience Required
  1. Show creativity in cookery techniques and ability to train others
  2. Work well under pressure
  3. Be team-oriented
  4. Hold a positive, punctual, and professional approach
  5. Familiar with food safety and OHS guidelines
  6. Possess attention to detail
  7. Competent with ordering and managing stock
Responsibilities
  1. Manage finances for kitchen operations
  2. Produce quality food
  3. Oversight of menu creation
  4. Train junior personnel
Qualifications
  1. Certificate IV in Commercial Cookery
  2. 4+ years of kitchen experience
  3. Leadership experience working with junior chefs
  4. Experience working within budget constraints
