The opportunity

Delaware North Australia is seeking a full-time Head Chef to join our team at Pickett's Deli & Rotisserie, Melbourne Airport. We are looking for a passionate and experienced culinary leader to oversee our bustling kitchen. As Head Chef, you will manage menu creation, kitchen operations, and staff development, ensuring each dish reflects the quality and creativity associated with Scott Pickett. This role offers a chance to showcase your culinary skills in a fast-paced environment, leading a talented team and delivering exceptional dining experiences for travelers worldwide.

What will you do?
  • Drive kitchen operations to meet financial goals, profit margins, and business growth
  • Oversee menu planning and design, ensuring consistent, high-quality, fresh offerings
  • Ensure compliance with HACCP and Food Safety standards
  • Manage inventory, COGS, labour costs, and P&L reporting
  • Recruit, train, and develop team members to ensure culinary success
More about you
  • Experience in a similar role within a restaurant venue
  • Minimum Certificate IV in Commercial Cookery
  • Diploma of Hospitality, HACCP Certification, and Australian Culinary Federation qualification preferred
  • Extensive experience in menu planning and design
  • Proven leadership in managing and motivating diverse culinary teams
  • A passion for food and creative flair
  • Knowledge of financial and business operations
  • Ability to work a 7-day rotating roster
