The individual will be accountable for the entire operations of the Restaurant, Pascale Bar & Grill and IRD, and will take responsibility in driving the financial outcomes of their allocated department/s – Wages, COGS, Expenses, maintenance, & overheads. The Restaurant and IRD Manager will drive and develop the team to perform at a World Class level and will ensure high standards of service are maintained at all times.

• Lead overall accountability for the people, product, service, and maintenance standards across the Restaurant and In-Room Dining departments.

• Continually review and evaluate the performance of the restaurant and IRD operations, with a strong focus on wine service and dinner execution, ensuring alignment with business objectives and delivering strategies to drive performance.

• Partner with the F&B, Sales, and Marketing teams to develop and activate business initiatives, exploring new opportunities through research, innovation, and early activation strategies.

• Support the F&B Director with end-to-end people management, including recruitment, onboarding, training, coaching, and rostering, to ensure exceptional service delivery and team engagement.

• Oversee the effectiveness and accuracy of internal systems and POS platforms (Infrasys, 7Rooms), ensuring smooth operations and data integrity.

• Manage departmental financial performance by monitoring and controlling wage costs, beverage costs, maintenance, and other expenses, delivering results in line with budgeted revenue and profit targets.

• Demonstrated experience in a similar role as a restaurant or assistant restaurant manager

• Previous Hotel experience is a bonus

• The ability to work under pressure in a busy and dynamic restaurant

• Passion for culinary excellence

• Experience with silver service is not necessary but is recommended

• Excellent presentation and exceptional communication skills

• Experience leading and training a high performing team

• Sound knowledge of current food trends

• A solid understanding of wine and service
