Overview

Rydges Sydney Airport - Food and Beverage Manager role with EVT - Entertainment | Ventures | Travel. The role oversees the Food & Beverage outlets and the operational requirements of the conference & event venues, coordinating communication between outlets, Conference & Events teams, the kitchen, guests and other hotel departments. Leaders are expected to be present, visible, and approachable during peak service periods, conduct team meetings, coach and counsel, engage on Workplace, provide information and incentives to the team, and actively review guest feedback.

Key Responsibilities
  • Maximize revenue through effective management of Spend per Cover (SPC), Capture Rates, and departmental profit margins.
  • Analyze P&L statements, manage stock control, and ensure labor costs align with forecasts and budgets.
  • Build and maintain a high-performance culture, focusing on engagement, development, and retention of top talent.
  • Collaborate with the Executive Chef to design profitable menus and wine lists tailored to guest preferences.
  • Oversee guest feedback, ensure top-notch service, and ensure adherence to safety and hygiene standards.
Skills & Experience / Qualifications
  • Proven success in a senior F&B management role, with strong financial and operational acumen.
  • Expertise in analyzing P&L statements, managing budgets, and optimizing revenue.
  • Ability to lead and inspire teams, fostering a positive work culture.
  • Strong knowledge of menu costing, pricing strategies, and profitability analysis.
  • In-depth understanding of compliance with health, safety, and hygiene standards.
