The Role of Head Chef

As a Head Chef at the Albury Wodonga Military Area, you will be responsible for delivering premium dining experiences to Defence personnel. This is an opportunity to bring your passion for food and quality to a unique environment.

In this hands-on role, you will collaborate with your team to deliver daily mess meals and events. You will maintain all catering and stock controls, ensuring OH&S compliance and HACCP standards. Your focus will be on waste reduction, forecasting food requirements, ordering and stock control.

You will drive exceptional food safety and quality, considering allergen and dietary requirements. A high level of knowledge and experience in operational and financial performances of the defence business is required.

This is a full-time position, Monday to Friday, with minimal weekends and nights. You will receive full training and support while working with a dynamic and fun team.

The ideal candidate will have:

  • Certificate 3 in Commercial Cookery
  • 3+ years' experience as a head chef in similar venues
  • Comfortable with people management, training and developing
  • High level knowledge in HACCP, allergen management and food safety
  • Proven team leadership and organisational skills, able to work autonomously and under pressure
