The Star Brisbane is Australia's newest entertainment hub at the heart of the new Queen's Wharf Brisbane precinct. The first phase is now open, with more venues and experiences on the way. The Star Brisbane offers a variety of new dining, bars, and unique entertainment options. It also includes a five-star luxury hotel, The Star Grand, and a state-of-the-art Event Centre.

This transformational project has brought even more excitement and anticipation to burgeoning Brisbane. It will redefine how people play, shop, and socialise in the river city.

The Junior Sous Chef, reporting to the Sous Chef, will become an important part of our pre-opening team. This role offers the opportunity to support the team in ensuring flawless delivery and execution of product excellence and service whilst maintaining food safety.

A few of your responsibilities

1. Thorough knowledge of the entire menu, including an understanding of all base products and ingredients used.
2. Food is prepared for food presentation, in line with menu requirements and kitchen standards (SOP's).
3. Mentor and develop the Demi's, Commis', Cooks, and Apprentices in the team.
4. Be able to perform complex cooking duties and produce a dish/recipe, from a combination of ingredients without supervision and assist mis en place across all sections.

What we will be looking for

1. High volume culinary experience.
2. Can-do team attitude.
3. Strong knowledge of food safety regulations.
4. Trade certificate in Commercial Cookery (or equivalent qualification).

About you

You will be experienced in high volume kitchen environments with sound knowledge across all sections. These roles require comprehensive knowledge of kitchen hygiene practices and OH&S standards and taking pride in keeping your section stocked and tidy. These roles are integral to the team and ensuring all preparation for your section is in line with service for the day and adhering to food safety requirements.
